Flavor of the Week {Paleo Biscuits & Gravy}

Last week I shared a photo last week on Instagram that got a lot of people excited.

Biscuits and gravy on the Paleo diet? Yep, it's true!

Here's how I did it:

Paleo Biscuits:
  • 6 egg whites
  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 1//2 tablespoons cold ghee


Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
Mix almond flour, coconut flour, baking powder and salt together in a large mixing bowl.  Cut in cold ghee with a pastry blender (or a fork will do) until the mixture is crumbly.  Place the bowl in the refrigerator.  In a medium bowl whisk egg whites until they are very frothy (you want all froth and no runny egg left).  Remove the bowl from the fridge and fold the egg whites into the chilled flour mixture until well combined.  Scoop about 1/4 cup of dough onto the baking sheet and form into the shape of biscuits.  Bake for 15-18 minutes, or until the tops are golden brown.  Serve warm or store in an airtight container in the refrigerator.
 Now, the biscuits were good (they made great bacon & egg sandwiches), but the real winner of this post was the sausage gravy!

Simple Sausage Gravy:

  • 1lb of your favorite sausage
  • 2 tsp arrow root flour (this is a corn starch like substitute)
  • 1 tsp coconut flour
  • 1 can coconut milk
  • salt & pepper to taste ( I like lots of pepper in my sausage gravy)

In a skillet, brown the sausage then sprinkle on the arrow root flour and coconut flour and mix.  Add the coconut milk, salt & pepper and stir to combine.  Cook over medium-low heat for 5-10 minutes until the sauce becomes thick.

This is by far our new favorite paleo recipe(s)!  Enjoy!

This Week's Eats

Even after the major fail I had on Friday, we're back to eating paleo.  This is the last week we planned to stick to it super strict but we are discussing extending our efforts to some degree.  Maybe switching over to a clean eating plan more so than strict paleo.  We'll see.  Here's what we're eating this week:

Monday: Grilled meat (Steak for Jason, chicken for me) & Ratatouille
Tuesday: Thai Curry Soup (was on the menu last week but we wanted something else so this got the boot)
Wednesday: Chicken Tortilla Soup (in the CrockPot)
Thursday: Orange Chicken Stir-fry
Friday: Chicken Cacciatore
Saturday: Stuffed Eggplant
Sunday:  ANNIVERSARY DINNER

This is a mostly routine/unexciting week for us until Sunday when we'll celebrate our 6 year wedding anniversary.  We're still trying to decide what to do for our anniversary.  All these great restaurants in San Diego get together for San Diego Restaurant Week (SDRW) a couple times a year.  We celebrated my 31st birthday at their kick off party in September and the 10th annual SDRW starts on our anniversary this year.  All of the participating restaurants have preset menus for discounted prices, we just have to choose one!  Anyone in SD have a recommendation?

10 on 10 {January 2014}

Today is the 10th! It's time for another link up with Rebekah for 10 on 10!  I love documenting the little details of the day.  Some days are more exciting than others and since the 10th fell on a work day this month, its one of the latter, but I forced myself to snap 10 photos in 10 hours anyways.

I CHEATED AGAIN!  Y'all, nachos are my FAVORITE junk food and when I saw them at the pot luck I just couldn't resist.  If you remember last year I ate paleo for a week and my first non paleo meal was nachos.  It might be my favorite food.

Finally finished organizing a 2 foot stack of papers into binders for the boss man, and with that it was time to go home.

National University Holiday Bowl

A few weeks ago Jason scored a couple of free tickets to the National University Holiday Bowl.  I have no affiliation or connection to either of the teams that played (Texas Tech and Arizona State University) but I will never turn down free tickets to a football game.  One of the couples we play softball with was also going and their seats were significantly better than our so we hung out with them most of the night.
 
When I said their seats were significantly better, I kind of meant the best seats in the house!
 
 The reason Jason snagged the free tickets was because he is doing his Nursing school pre-requisites at NU and they wanted to honor some veterans on the field during the game. 
 
I missed taking a photo of him on the big screen because I was actually take photos of him on the field, but they announced his name and showed him on the jumbo-tron. 
 
 It was a pretty interesting game but TT was dominating at the end of the 3rd quarter and it was FREEZING that night (45 degrees is freezing to me now) and I had to get up for work the next morning so we bailed a little early.
 
This was my first college bowl game and although it wasn't the Rose Bowl or the Orange Bowl, it was a fun night!

Weekly Meal Plan {a link up}

Just like last year, we're starting the year our with our own made up paleo/cleanse.  I don't have time nor the desire to go through the caffeine withdraws so beside my down to 2 coke a day habit, we're eating completely clean.  No sugar, no processed foods, no fast food, no JUNK!  Week 1 was ok.  Everyone talks about how good they feel and how much energy they have but my body didn't react that way.  I was tired all week and had a nagging headache (that wasn't from caffeine withdraw because I didn't give that up).  It was miserable.  Yesterday and today were better.  I'm still waiting for that incredible feeling I hear about.

I'm a little late to the show but I decided to join in on Jessica's weekly meal plan link up.  I love meal planning, I think it has to do with my general preference to have control and make lists.

Monday:  Cabbage Soup (I normally love cabbage soup but this was really disappointing.)

Tuesday: Rotisserie Chicken Chili

Wednesday: CrockPot Pot Roast

Thursday: Thai Curry

Friday: Grilled Salmon and sesame noodles (using julienne zucchini for the noodles)

Saturday: Pulled Pork

Sunday: Fajita Lettuce Wraps

Some of these recipes call for sugar and I'll simply substitute honey, or soy sauce and I'll substitute coconut aminos.  It's so easy to make little changes and still eat your favorite foods in a much healthier fashion.
